My choice would be Conrad Hall's In Cold Blood.

Here are the academy's choices for 1968:

Funny Girl
Ice Station Zebra
Oliver!
Star!

And here are my choices:

2001: A Space Odyssey
The Battle of Algiers

Clearly these are the first two choices. The first is one of the most stunning visually of all films. The second gives an image of unprecedented realism.
