My Superbowl meal will consist of UTZ Popcorn, UTZ Cheese Popcorn, UTZ Barbecue Potato Chips, Cheetos Puffs and I'll top it off with Roasted Seaweed strips and some Grey Goose and Cranberry juice to wash it all down. (Uhmmmm...I like the saltier UTZ brand rather than LAYS or WISE).

I have never tried UTZ products, Theresa, but the Grey Goose and Cranberry juice sounds just glorious. Wish I could drop by with a twist of lime for that and to laugh at the weirdness of the Stupor Bowl action during the halftime.

We're making regular red chili today, with chuck or brisket instead of ground meat.

I am also making savory madeleines, which I made 2 weeks ago for my daughter's french class, in traditional sweet lemony form... today, I made two saltier batters - one basil parmesan, one shrimp, tarragon and lime.

Wish me luck that these dainty cakes come out delicious.

I'm also making a vegetable plate with dip, and some fruit salad.

That sounded like a great plan. Maybe next year. Bring the chili and the lime...I'll have the Goose and the laughs. No wait...there's no laughing in football.

Potato Soup, made with milk & half n half, bacon, and New York sharp White Cheddar. a loaf of herbed bread with basil and sun dried tomatoes, a red wine....Downton Abbey, here I come!!!! (my version of a non super bowl party for one!)

Maven, we should have gotten together this year, it would have been a heck of a lot more fun watching the pats get hammered if we were hammered at the same time!

D'oh, I wish I had thought of it before. Except for the small fact that we are on the opposing team, I think it could have been a lot of fun! :D :D

Andrew is not a particular fan of the Pats, but he was so miserable last night! I should have told him to just turn off the tv. As it was, I went upstairs and watched Downton Abbey at 9. Now that was exciting! :D

That WAS a heartbreaking loss. Well...let's both think of a comfort food get-together for the next big occasion...or maybe we could just lunch.

Sounds Delicious ... care to share the recipe or its a family secret! I love Potato Soup :!: :D :!: :D :!:


Baked potato soup:

4 large baking potatoes
2/3 cup butter or margarine
2/3 cup all-purpose flour
6 cups milk **
3/4 teaspoon salt
1/2 teaspoon pepper
12 slices bacon, cooked, crumbled and divided **
4 green onions, chopped and divided **
1 1/2 cups shredded Cheddar cheese, divided **
1 8 ounce carton sour cream

Wash potatoes, prick with fork, bake at 400 for 1 hour or until done. Cool. Cut in half lengthwise, scoop out and reserve pulp. Discard shells**
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly, until thick and bubbly.
Stir in potato, salt, pepper, 1/2 cup bacon, 2 tablespoons green onions, 1 cup cheese. Cook until thoroughly heated ( do not boil).
Stir in sour cream, cook just till heated. Serve with remaining bacon, cheese and green onions. Yield: 2 1/2 quarts.

I cut entire recipe in half.
** I use half milk, the other part is 'half & half'
** for convenience, I use Hormel real bacon bits.
** I pass on the onions.
** The best cheese is the New York Sharp White Cheddar.
** If your potatoes are large, you can save a bit of the pulp in the shells, and use them for potato skin appetizers.

When I cut the recipe in half, I usually add more than half of the sour cream, and lots more cheese....

Gad! I gained weight just reading this one! :D

I love potatoes. They are my true comfort food, which means I will eat until there is nothing left, no matter how much I made. Add bacon and cheese and well... it's sheer heaven! This is the kind of recipe where I find myself at the bottom of the empty pot without even realizing it. Then pass out from carbohydrate intoxication. :lol:
